In a rare display of the Hocho Shiki, or Knife Ceremony, Nobu will masterfully break down a 140‑pound Bluefin tuna before your eyes, revealing prized cuts like otoro, akami, and chutoro. Alongside him, celebrated chef and author Kaz Matsune will transform these cuts into exquisite sushi creations as you watch—and taste—the artistry unfold.
Throughout the ceremony, Nobu shares the rituals, techniques, and flavor profiles behind each part of the fish. Guests are invited to scoop and savor some of the freshest tuna imaginable straight from the source.
